I’m In for 10!

January is traditionally the month to start a new weight loss program.  We all over-ate during the holidays.  You know the drill, Halloween candy and Fall Festivals start the slide to over-eating and it continues IMG_2624 webthrough November with Thanksgiving with all that pie, stuffing, dressing, candied-who-knows-what and gravy over everything!  December is filled with every excuse in the book to have a get together.  From those office parties, charity events, family reunions, weddings, anniversary parties, graduations, Chanukah,  Christmas and so on, food is the center of our attention for about 3 months.  And does it ever show by New Year’s Day.  Sigh….

So here we are again, looking at that same 10 pounds we looked at last year, sitting on our butts and bellies.  Our clothes are tight, we feel sluggish and the TV is loaded with commercials for every sort of weight loss miracle. ” Just do this for 10 minutes a day and you will look like some thin, over-developed blonde in a smaller than need swim suit.”   Not going to happen, but we can delude ourselves that there is really a magic, miracle pill that will make all this extra fat go away with no effort.

Benefits of Weight Loss     There are many reasons to get rid of those pounds. Some are pure vanity, we want to look our best.  Spring Break is coming soon and the beaches of FL need our slim bodies to soak up some sun for a week.  Our heart would appreciate not having to support such a large mass of fat, so our blood pressure would drop.  Our cholesterol would improve, the risk of diabetes would lower and we would sleep better.  None of those is bad!  The long term benefits of weight loss has been studied by many, even the CDC published studies showing the positive effect of weight loss on chronic diseases.  I don’t like to be ill, how about you?

My Favorite Snack for Summer!

Summers should be spent by the water, or on the water in a boat, splashing about.  Laughing and having fun while getting some exercise is the best way to spend a hot summer afternoon.   Growing up in the South, I spent my Summer days outside playing.  Splashing in the lake or hiking in the woods, both were adventures.IMG_3789 Beach with Umbrella and Palm Shadows 4x6 100dpi

After a few hours of playing, we would be ready for a mid-afternoon snack.  Of course, cold watermelon was delicious, along with strawberries and peaches.  To add some crunch to the fruits, we often had a big bowl of popcorn!  Back then, we did not have a microwave to instantly nuke some kernels of corn coated in a variety of chemicals.  No, we did things from scratch.

Now that I have my own family to make snacks for, I find myself going back to the easy way to make popcorn, on the stove top!  It is yummy and easy.  The recipe has been handed down in the family for generations, and I just passed it on to my niece while we were on a family vacation.  She could not get enough of my popcorn.  Puts the microwave stuff to shame!

The recipe is simple really and even the older kids can get in on the fun.  Make this a family cooking event.  And it is good year round as well.

1.  Large Dutch Oven or Pressure Cooker base (larger the pot the better).
2.  Splatter guard.  I use a silicon one, but a metal one would work as well.
3.  Organic Coconut Oil.  This is what makes the popcorn have a yummy flavor.  And no, it does not taste like coconuts when popped.
4. Non-GMO Popping Corn.  I like the Organic Popping Corn from the Farmer’s Market as well as the Orville Redenbacher Non-GMO White Popping Corn.  White or Yellow is your personal choice.  They both taste good, just slightly different!
5.  Table Salt.  I used Iodized Table Salt.  It is fine and sticks to the kernels.  And that is important since unsalted popcorn is just yucky!  Kosher salt is usually to large and does not stick as well.

Now, put your pan on the eye of the stove, medium high heat.  Add 1 Tablespoon to 1 1/2 Tablespoons of Coconut Oil to the pan.   As the coconut oil melts, lightly cover the bottom of the pan with the popcorn kernels.  You might need to adjust the amount of popcorn to suit your pan as you don’t want the corn to overflow the pan when popped.  Give a light dusting of salt to the kernels, and add the splatter guard.

As soon as you hear the kernels begin to pop (several minutes will pass depending on pan and stove!) get ready to add some more salt.  When the pan is about half full of popped kernels, carefully slide the splash guard to one side, uncovering enough to peek into the pan.  IF the kernels are not hopping out of the pan, then add a little more salt.  Wait till you can safely add the salt as you don’t want corn everywhere!

Now is the time to start a gentle shake of the pan, still covered with the splash guard. Or you can take a big spoon or rounded tip knife to gently stir the corn kernels.  This will make certain that all the kernels come in contact with the hot bottom of the pan, so they can pop.  Fewer old maids this way! b22030 But do be very careful as the oil & pan are HOT!

When you hear the popping becoming less frequent, it is time to remove from the heat and salt one last time, stirring as you salt.  Grab some bowls, a glass of Shaklee’s Energizing Tea and get ready for the best afternoon treat anywhere!  You will never eat microwave popcorn again.

Most people think that governmental agencies ensure that our water’s clean. And while the Environmental Protection Agency (EPA) established the Clean Water Act to safeguard our water supply, it only set standards and testing requirements in our municipal water treatment facilities for 114 different contaminants out of literally hundreds more.

In fact, the Environmental Working Group obtained test results from a database of over 20 million records from state water officials to determine the quality of drinking water in 45 states. The results revealed 316 contaminants were present in our water supplies. Among them were 202 chemicals that aren’t regulated by any safe water standards.i

So yes, your water looks clean. But really, it’s not.

Alternative to Juicing, Easy & Simple

vegetables natural_smallIn December, I had a fun get-together with a former co-worker.  Adrienne and I decided to meet at the beach for a much needed restful weekend.  Adrienne wanted to share with me her new juicing machine and how she was enjoying the juicing experience.

I have a family history of diabetes – my mother, father and brother are all diabetics. I have always felt good, kept my health in check and got annual checkups with my family physician. Targeted Solutions to Aging

Aging.  Well, we are all aging if we are over 18 years old or so!  Some of us age more “gracefully” than others.  Gracefully, meaning that we don’t physically show the signs of aging like gray hair and wrinkles as soon as others.  However, those Hollywood mandated signs of aging are only superficial.  Aging is at the cellular level and is happening everyday.

The HCG Controversy

Recently I was attending a meeting and heard from 2 different people that they were using the “amazing HCG diet”.  HCG is human chorionic gonadotropin.  ” Take these drops or injections (depends of the plan) and stick to a 500 calorie diet each day and you will lose about a pound a day” one person said.  Well in my experience if you are on a 500 calorie diet, you will lose weight! No surprise there.

But the people insisted that this was “the way” to get back into shape.  No hunger pains, no exercise, no real work or worry.  I would worry about taking something that the FDA has not looked favorably upon.  I would worry about cutting my food intake so much that I was burning more that fat in order to “lose weight”.  If things are too easy, most times there is something wrong with the process.  But these 2 people were sticking to the plan.

Letters have been sent to 7 different companies according to the FDA statement. “FDA and the Federal Trade Commission (FTC) have issued seven letters to companies warning them that they are selling illegal homeopathic HCG weight-loss drugs that have not been approved by FDA, and that make unsupported claims.”

According to the FDA site, “Living on 500 calories a day is not only unhealthy—it’s hazardous, according to FDA experts. Consumers on such restrictive diets are at increased risk for side effects that include gallstone formation, an imbalance of the electrolytes that keep the body’s muscles and nerves functioning properly, and an irregular heartbeat.

Shirley Blakely, a nutritionist at FDA’s Center for Food Safety and Applied Nutrition, echoes concerns about such restrictive diets. They can be dangerous, she says, and potentially fatal.”

Of course I am partial to the clinically proven, natural weight management system from Shaklee call Cinch Inch Loss Plan.  Loose inches, keep the muscle mass you need and loose the fat you don’t need.  Muscle mass = metabolism.  The main thing is to lose the weight safely, slowly and in a manner that breaks the “YoYo” diet cycle!  Stay well.

Hidden Sugar can Derail Your Weight

You know when you eat a candy bar or a few cookies that you are eating sugar.  You plan on those calories and carbohydrates.  However, you don’t expect to find high amounts sugar in some of those “healthy” sounding beverages or in “weight loss” foods do you?  I did not think about pasta sauces having loads of sugar!

I recently read an interesting article where the author, Elaine Magee, MPH RD, explored some hidden sugar in our commonly used foods.  Foods that are often marketed as “healthy”.  Foods that are not associated with sugar in our general mindset.

Being hypoglycemic, I have to be careful of my sugar intake or I feel bad quickly and have even fainted! Not fun.  So reading Elaine’s article was eyeopening.  Here are a few things that caught my eye.  Hopefully they will point the way for you to read more labels and be aware of the possibility of hidden sugars.  Keeping weight down, keeping sugar in check for a diabetics while  feeling better is our goal each day.  Wellness is better than Disease Care!

Seems like sugar hides in strange places!  Did you know that Sugar is the first ingredient listed in Fiber One’s muffin mix?   A muffin’s worth of mix contains 15 grams of sugar.  Fiber One Muffin Mix,
Apple Cinnamon: 1/4 cup mix (as packaged) = 15 grams sugar, 130 calories.
Also, in Nutri-Grain Cereal Bars (all flavors): 1 bar = 12 grams sugar, 130 calories.  Now that is is shock since you think these bars are “healthy”.

Elaine found sugar in Pasta Sauces too.  Now I am not a big fan of pasta, but all my friends and family love pasta dishes and boy, do they have a surprise coming!   According to Elaine’s research for WebMD, popular pasta sauces:                                                                                               Newman’s Own Tomato & Basil: 1/2 cup = 12 grams sugar, 90 calories
Bertolli Vineyard Marinara: 1/2 cup = 12 grams sugar, 80 calories
Prego Fresh Mushroom Italian Sauce: 1/2 cup = 11 grams sugar, 90 calories
Prego 3-Cheese: 1/2 cup = 11 grams sugar, 80 calories

So learn to read labels.  Learn the different names of “sugar” such as natural sugars from fruit (fructose) and milk (lactose) as well as added sweeteners like refined sugar or high-fructose corn syrup.  Keeping a healthy weight is a challenge for many of us.  Now that you have a hint of what to look for in foods, be armed and vigilant as you shop and make choices in restaurants.  Remember that diet, exercise and wise supplementation are the keys to Wellness!  Stay well!

As in my Grand Parent’s Day

As you know I am a big, big fan of Green products and being kind to our planet.  All that started when I was a kid and lived on a farm.  Used to use as little chemical products as possible.  Compost,  crop-rotation and natural fertilizers were popular even then.  Up early with a very sharp hoe, my Grand Mother and Grand Father did more in the early morning hours than most folks today do all day.  They knew the true meaning of work and it was their guiding principle each day.

They never put off till tomorrow what could be done today.  Since they knew that tomorrow would present a whole new packet of opportunities, work for today was done today.  We spent Summer evenings shelling peas or beans on the front porch watching the fireflies do their thing!  From early morning till late evening they never stopped.  Vegetables picked, shelled, canned or blanched for freezing, hulls put in recycle bins, worms fed and the cycle began again.

And we can all follow this example.  Ask yourself if you are really doing all you can to recycle?  Do you purchase products that are in recyclable packaging, from sustainable resources?  Do we use too many take-out plastic containers when we know we can bring along our own containers to carry home our leftovers?

Are we putting off till tomorrow making a few small changes that can make a big difference for us as well as the planet?  Are we using green cleaning products that don’t pollute, don’t contain harmful chemicals that cause asthma problems in our children or peril for our pets should they wonder into a spill?  Are we using the safest green cleaning products that can be found or just looking at the labels buying from the pictures?

As in my Grand Parent’s day, we need to take responsibility for ourselves, grow more of our own food, learn how local farmers keep prices down by selling locally, learn that fresh is better and organic means no chemicals.  Eating local produce, local beef, chicken, fish may mean a bit higher price since it is not massed produced, but it also means better taste, higher quality of product available and is always a boost to the local economy!  Win – Win for all involved.

So scout out some local farmers markets, local fisheries and local chicken farmers who have free-range chickens for eggs and meat.  Yummy.  Local fruit is delectable since it can stay on the tree or vine till ripe.  An amazing idea!  Ripe fruit, tree ripened is wonderful in desserts, salads and just as an afternoon snack.  Fill those lunch boxes with fresh local fruits, vegetable salads and enjoy.

Look at your habits, see where a few simple changes can bring you back to using local produce, local fruits and local eggs etc.  Plant a few rows of corn next spring, a few tomato plants for sweet goodness to add to salads and salsa all summer.  Now is a great time for winter squash, turnip greens and collards.  Plant in a flower pot or in a small garden, but get involved in your own life.  Feed yourself and you will appreciate the work and effort of the local farmers when you purchase you next batch of vegetables for that big pot of vegetable soup!   Stay well.
